The following recipe is a recipe for bread that once you have eaten it you will never ever go back to store bought rice bread that is so dense and sticky that you could hang picture frames with it on the walls. The bread is airy, yet not crumbly and above all tastes like bread. The basic recipe can be used to flavor the bread to your own taste, see the end of the recipes for tips. This bread does not crumble, can be eaten after defrosting without the need of toasting it and above all makes fantastic French Toast.
The only thing is you do need either a stand up mixer or a hand mixer as you want to mix it very well.
This recipe is not only Gluten Free but also Egg Free, Soy Free, Sugar Free and Dairy Free.
Gluten Free Bread
1.5 tsp Dried Yeast
2 tbs Maple Syrup
1.5 cups Luke Warm Rice Milk
2.5 cups Gluten Free Flour
Or if you mix your own: 2 cup brown rice flour, 1 1/3 cup potato starch and 2/3 cup tapioca starch. This will make 4 cups and keep the rest in an airtight container. This way you will always have gluten free flour on hand.
2 tsp Xanthan Gum
1 heaped tbs rice bran
1 tsp Salt
3 tbs Flax Meal mixed with 2/3 cup Boiling Water, let stand to cool
1.5 tbs Vegetable Oil
1 tsp Cider Vinegar
Put the dried yeast, maple syrup and luke warm milk in the mixing bowl and let stand till frothy.
Add the flour, rice bran, xanthan gum, salt, flax meal mix, oil and vinegar. Start mixing slowly and increase to high when all the flour is incorporated. Mix for 5 minutes.
Put it into a non stick bread pan or a silicone pan, no need for greasing it. Leave it to rise, covered, for 1 hour.
Preheat the oven to 200C/ 400F. Bake the bread for 10 minutes and then reduce the heat to 180C/ 350F and bake for another 70 minutes. Cover it with tinfoil after 35 minutes to avoid the crust from becoming too dark. If you don't like your bread too crusty, cover it with a clean cloth when you remove it from the oven.
Let cool completely. Freezes really well. Slice the bread and freeze on a baking tray. Transfer into ziplock bags or containers for easier storage. Take bread out when needed. Either defrost it on the countertop or in the toaster.
Get out your favorite bread recipes and add your favorite flavors to the bread mix.
*Add 1 tbs cinnamon and 1/2 tsp nutmeg to the mix. And fold in 1 cup of raisins before putting it into the pan.
*Fold in 1/2 cup of seeds, like sunflower or sesame seeds after mixing.
*Fold in 1/2 cup of nuts, like walnuts or pecans after mixing.
