If you think that you don't have time to make steelcut oats in the morning, think again. My friend Honorah told me about this trick which means I have breakfast within 2 minutes. One minute to heat up the oatmeal in the microwave and to cut up the banana and the other one to battle my way to the table to sit down. Why is it a battle? Our dog wants the other half of the banana.....
This makes enough for 4 days for 1 person. Make double the amount if necessary.
So here is what to do:
At night, rinse 1 cup of steelcut oats (don't use rolled oats for this) under running water and combine with 4 cups of cold water in a pot. Bring to the boil, boil gently for 2 minutes and take it off the heat. Let it stand overnight. The next morning, stir well and take the amount you need and microwave it till hot. The rest will keep in a container in the fridge for a week. Add your favorite toppings, what about banana and pecans or blueberry and walnuts? I like to add some ground flaxseeds and sometimes some maple syrup. Brown sugar and cinnamon is good too!!
