This is such a tasty pie crust that it doesn't matter if you are on a grain-free, gluten-free or an all-you-can-eat diet, it tastes amazing. This recipe comes from ComfyBelly and I love it for both savory and sweet pies. I use it in my Zucchini Quiche and my Apple Pie.
You can make it by either using a food processor or making it by hand. I prefer making it by hand as it results in a flakier crust. Just cut up the butter in small cubes and rub it into the flour till it resembles fine breadcrumbs.
Remember, almond flour does not contain gluten. You will have to get more hands on with this one than with the regular roll out pastry. But then it is also more forgiving because you can just patch up the holes with a little dough. I do roll it out between 2 sheets of parchment paper to get the desired thickness. I find that 1/8 of an inch works the best. I have handy little helpers for this job, silicon rolling pin space bands, it makes sure I have an even rolled out dough every time. Pull off the top sheet of parchment paper, put your pie dish upside down onto it and gently push your hand underneath the bottom sheet of parchment paper and flip it over. Mind you, this is not foolproof, bits will break off and it will crack in places but just patch them up with your fingers and pieces of dough. I add extra dough to where the sides meet the bottom to prevent leakage of the filling.
Before you put it into the oven, put it into the freezer for 10 minutes or fridge for longer so the butter can harden up again. This will make sure you don't lose any of your flakiness. Use pie dishes / pans with removable bottoms if you can, this makes it a lot easier to get the pie out of the dish after baking without breaking it.
12.5 oz almond flour
1/2 tsp coarse sea salt
2 oz butter or dairy free substitute such as Earth Balance, small cubes
1 egg, whisked lightly
If making this by hand, in a large bowl combine the almond flour and the sea salt.
Add the butter and rub it into the flour till it resembles fine bread crumbs.
Add the egg, all in one go, and using your hands to bring it all together.
If making this with the food processor, add the almond flour and sea salt in the bowl of the food processor and pulse till combines.
Add the butter and pulse 5 times.
Add all the egg and pulse till it starts to come together. Don't keep going because the butter will disappear into the mixture and your dough will not turn out flaky. Use your hand to bring it all together into a ball.
Use the dough according to your recipe you are making.
